4 tablespoons of lemon juice

1 package of sweet potato

Blend lemon juice, onion, carrot, parsley or thyme, black pepper, and salt in a blender to get a uniform mixture

Place the fillets in a baking dish
Brush them well with the mixture and olive oil
Cover with aluminum foil and bake for 40 minutes or until the fillets are cooked
Remove from oven and keep warm
Creme
Combine the fish head and tail, onion, garlic, and salt in a pan
Simmer over low heat for three minutes, stirring occasionally
Add water and bring to a boil
Simmer for 15 minutes
Remove from heat and strain through a fine-mesh sieve
In another pan, combine flour and gradually add the liquid, whisking until smooth
Add milk, mustard, olive oil, and English sauce
Whisk until thickened
Set aside
To assemble the dish
Place the creme in a baking dish and arrange the fillets on top with their sauce
Distribute sweet potato over the top.
