1 large linguado fish of 2 kg or 2 smaller ones of 1 kg without the central spine

2 tablespoons of freshly chopped coriander

1 tablespoon of honey

1/2 cup of lime juice
1/2 cup of olive oil
2 cups of finely chopped onions
1 cup of tomato pieces, peeled and finely chopped
2 tablespoons of coriander for sprinkling

1 cup of tomato pieces, peeled and finely chopped
2 tablespoons of coriander for sprinkling
Wash the fish under boiling water
Dry it well inside and out
Sprinkle 1 tablespoon of salt inside the fish and let it rest for 15 minutes
Heat the oven to a warm temperature (400°F)
Grease the bottom and sides of a large refractory dish with enough space for the fish with some room. Reserve
For the seasoning: mix the garlic, chopped pepper, ginger, 2 tablespoons of freshly chopped coriander, grated coriander, honey, turmeric, 1 tablespoon of salt, and lime juice
Put everything in a blender
Blend at high speed for 30 seconds
Turn off the appliance, scrape the sides of the cup, and blend again until you get a smooth paste
In a frying pan, heat 1/2 cup of olive oil
Add the onions and fry for about 7-8 minutes or until they are soft and golden brown
Beware not to burn it
Add the blended seasoning and cook stirring for about 10 minutes or until almost all the liquid has evaporated and the bottom of the pan appears
Add the tomato pieces and remove from heat
Cover one side of the fish with 1 cup of the seasoning, smoothing it well
Flip the fish and place it with the seasoned side facing down in the prepared dish
Fill the cavity of the fish with 1 cup of the seasoning
Closure with skewers or sticks or sewing
Spread the remaining seasoning over the top and bake in a preheated oven at warm temperature (400°F)
Bake on the middle rack for about 25 minutes or until the fish is firm when lightly pressed with your finger
Sprinkle with fresh coriander and serve immediately in the same dish
