Preheat the oven to 250°C (very hot)
Wash the fish and pat it dry
In a refrigerator or a baking dish large enough for the fish, spread 1 kg of kosher salt
Place the fish and cover with the remaining salt
Press the salt with your hands to secure it well on the fish
Put in the preheated oven for 45 minutes or until the salt is firm
Remove from the oven and carefully break the salt crust, discarding it along with the fish skin
Serve with olive oil and lemon
