1 onion, chopped
2 tablespoons of butter
2 cups of cooked fish, flaked
3 cups of cooked rice
1 1/2 teaspoons of salt
4 tablespoons of chopped fresh parsley
1 hard-boiled egg, chopped
to taste pepper
1 tablespoon of red bell pepper, chopped
1 hard-boiled egg, cut into slices

Sear the onion in butter
Add the fish, rice, salt, pepper, 2 tablespoons of fresh parsley and chopped egg
Stir gently
Transfer to a greased baking dish and bake in a moderate oven for 15 or 20 minutes
Garnish with slices of egg and remaining parsley
Serves 4-6 portions.
