5 green bananas (or plantains), cut in half with skin on

Heat the olive oil in a pan and sauté the onion and garlic until they start to brown
Add the sliced green bananas, cilantro, tomato extract, and 4 cups of water
Simmer at low heat for about 20 minutes or until the bananas are tender
Add the cod fillets and lime juice
Simmer for another 20 minutes or until the fish is cooked through but still moist
Serve in six portions.
