3 cups of warm mashed potatoes (700g)
3 separated eggs
3 tablespoons of butter or margarine
3 tablespoons of grated cheddar cheese or prato cheese
2 tablespoons of chopped parsley
To taste: salt and black pepper
3 tablespoons of all-purpose flour
4 tablespoons of natural yogurt
5 sausages cut in half, vertically

Beat the egg whites until pale
Add 3 tablespoons of warm mashed potatoes
Mix well
Add remaining potato mixture and beat well
Add melted butter, cheese, parsley, salt, black pepper, and flour
Mix well
Finally, add yogurt and mix for 1 minute
Beat the egg yolks until fluffy and fold carefully with potato mixture
Pile the mixture into 12 small, shallow, lightly greased baking dishes
Insert half a sausage into each dish and mound potato mixture around it
Bake in a moderate oven (180°C) for about 30 minutes or until pies are golden brown
Serve hot in the same baking dishes
