Place the fillets in a pan with the wine and enough water to cover them
Cook for 5-10 minutes
Let it cool down
For the sauce, mix the egg, salt, and pepper
Add the olive oil slowly, beating constantly
Add the lemon or orange juice, beating always
Add the heavy cream lightly beaten, mix well, and serve over cold fish fillets
Serve in 4 portions.
