1/2 pound of firm fish cut into strips
4 tablespoons of butter or margarine
1 clove of garlic, minced
1 tablespoon of finely chopped onion
1/2 cup of water, vegetable broth, or wine
4 tomatoes, seeded and diced
1 tablespoon of fresh parsley, chopped
salt and black pepper to taste
1/2 cup of breadcrumbs
1/2 pound of firm fish cut into strips

Heat the butter in a large skillet
When hot, sauté the garlic and onion for 1 minute
Add the remaining ingredients except for the breadcrumbs
Let cook without covering for 5 minutes, or until the fish is cooked
Add the breadcrumbs and serve immediately
Serves 4 people.
