1 medium-sized fish of 2 1/2 kg, cleaned

1 cup of parsley leaves
17 sprigs of cilantro
5 green scallions chopped
2 tablespoons of olive oil

Chop the parsley
Mix with cilantro and green scallions
Stuff the fish
Season with salt
Make cuts on both sides of the fish
Drizzle with olive oil
Line a baking dish with aluminum foil
Place the fish on top
Brush with olive oil and cover with another sheet of aluminum foil, sealing the edges well
Bake in a preheated oven for 1 hour or so.
