1 to 1.5 kg of fish (such as tainha, namorado, or badejo)
6 tablespoons of butter or margarine
2 finely chopped green onions
1 tablespoon of chopped parsley
2-3 anchovy fillets finely chopped
salt and pepper to taste
1 cebola cut into rings
3 tablespoons of grated Parmesan cheese
4-5 cherry tomatoes
3 tablespoons of breadcrumbs

Mix 3 tablespoons of butter or margarine well
Add the green onion, parsley, and anchovies
Mix well
Stuff the fish with this mixture
Grease a baking dish and arrange the fish inside
Sprinkle with pepper and salt, then top with rings of cebola and cherry tomatoes
Mix breadcrumbs with grated Parmesan cheese and sprinkle on top
Cover with remaining butter and bake in a moderate oven for 40 minutes or until the fish is cooked
Serve 4-6 servings.
