3 1/2 tablespoons butter
8 oz shiitake mushrooms, sliced (stem removed)
1 tablespoon soy sauce
1 tablespoon chopped scallions

1 tablespoon chopped scallions
Bring enough water to boil for cooking the pasta
Cook the penne in boiling water and salt until al dente
Drain and set aside
In a pan, melt the butter and add the mushrooms
Simmer for three minutes
Add soy sauce, let it simmer and turn off the heat
Add scallions and serve over the penne
Serve still warm.
