3 cloves of garlic, minced

3 yellow bell peppers, seeded and cut into wide strips
4 red bell peppers, seeded and cut into wide strips
6 medium tomatoes, seeded and chopped
salt and black pepper to taste

Fry the garlic in oil until it starts to brown
Add the remaining ingredients and simmer over low heat with the lid on, until the peppers are tender
If desired, remove the bell pepper skins
