Cut the zucchinis in half, remove the seeds and slice them
Place them in a bowl and sprinkle with plenty of salt, black pepper, and vinegar
Let it rest for at least 30 minutes to draw out excess moisture
Drain and place in a baking dish
Sprinkle with herbs and a pinch of black pepper
Dot with butter and bake in a hot oven (220°C) for 30 minutes
Remove from the oven and let cool
TO FREEZE - Place in an airtight container, close it tightly, and freeze
TO THAW AND SERVE - Place in a pan and reheat over low heat, stirring occasionally
Serve warm.
