1 small tomato, seeded and chopped

Cut the cucumber in half lengthwise and divide each half into three portions
Scrape off the skin, leaving some strips
Use a small spoon to scoop out the seeds and reserve
In a bowl, mix together the cottage cheese, olive oil, tomato, and cucumber pulp
Add salt and black pepper to taste
Stuff the cucumber pieces
Decorate with fresh parsley leaves, if desired.
