Peel the pears, leaving the core intact
Using a small knife, carefully cut around the core to remove the seeds
Arrange the pears in a baking dish
Combine the orange juice, wine, lime zest, and sugar
Pour the mixture over the pears, cover, and bake at 400°F for 24 minutes
Several times during the baking process, baste the pears with the pan juices
Remove from oven, sprinkle with gelatin, and mix well
Let it cool and then refrigerate until chilled
If desired, add a few drops of food-grade red coloring to the pan juices
Serve with whipped cream or vanilla ice cream
