1/3 cup (cup) of grated cheese

Lave the pears in cold running water with a vegetable brush
With a sharp knife, cut the fruits in half lengthwise and discard the seeds
With a spoon, remove some of the pulp and reserve separately the pulp and the skin
In a bowl, mix the yolks with the ricotta
Add the grated cheese, the pulp, and set aside
Season with salt, black pepper, and nutmeg
Set aside
Beat the whites until stiff and add delicately to the cheese mixture
Stuff the cavity of the pears
Arrange the pear halves in a refrigerator and bake at medium heat for a few minutes
Remove from oven and let it cool down
Serve dusted with grated cheese, if desired.
