1 pork ribs (3.5 kg)
3 large garlic cloves
1 tablespoon of thyme
1/2 teaspoon of cayenne pepper
1/4 cup of oil
4 tablespoons of lemon juice
1 tablespoon of salt
1 cup of water
2 kg of peeled potatoes cut into 1 cm cubes
1 cup of milk
oil for frying
Combine all the ingredients with water and lemon juice in a blender
Pierce the pork ribs, place them in a baking dish, and bathe them with the liquid
Put it in a hot oven (200°C), preheated, for 1 hour and 30 minutes, covered with aluminum foil
Remove the foil and bake for another 1 hour and 30 minutes, basting occasionally with the liquid
When it starts to dry out and the bottom of the baking dish starts to brown, add 2 more cups of boiling water and bake until the meat is tender and no liquid remains when pierced with a fork
Don't let the juices from the baking dish evaporate
In the end, you should get 2 cups of juice
Remove the pork ribs from the oven and reserve
Fry the potatoes in oil until they are golden brown
Drain on paper towels
In a large saucepan, combine the juice from the pork ribs, milk, and potatoes
Let it simmer well
Serve with the pork ribs
This serves 20 portions.
