1 turkey breast, approximately 5 kg

1/4 cup of butter or margarine
1/4 cup of wheat flour
1/2 teaspoon of salt
1/8 teaspoon of black pepper
1/2 teaspoon of grated ginger
1 1/2 cups of orange juice
2 cups of water
1/2 teaspoon of chili pepper sauce

2 whole oranges, peeled
500g sweet potatoes, cooked and sliced into thick rounds

Sprinkle the turkey with a bit of salt and sugar cane sweet
Cover with 5 tablespoons of butter or margarine and place in a moderate oven (170°C)
Mix the butter with flour, salt, black pepper, and grated ginger until creamy
Lentily add the orange juice, water, and chili pepper sauce, and cook stirring until the glaze becomes smooth and starts to thicken
Dip the turkey in the glaze
Slice the oranges into 1cm thick rounds, then cut each one into 4 pieces and serve with the turkey and sweet potatoes
Baste for another 30 minutes
If it dries too much, dip again with orange juice until the turkey is tender
Serve 8 portions.
