4 codfish fillets, approximately 250g each, cleaned and scaled
4 tablespoons of butter or margarine
1/2 cup of finely chopped onion
3/4 cup of grated carrot
1 cup of diced hearts of palm
2/3 cup of all-purpose flour
2 tablespoons of chopped parsley
salt and black pepper to taste
2 tablespoons of butter or margarine
2 tablespoons of lemon juice
4 codfish fillets, approximately 250g each, cleaned and scaled

In a bowl, mix together the butter or margarine, onion, and carrot
Microwave on high for 2 minutes or until the vegetables are tender
Do not cover
Add the hearts of palm, all-purpose flour, parsley, salt, and black pepper
Mix well
Place the codfish fillets in a rectangular baking dish
Stuff each fillet with the mixture above
Melt the butter (2 tablespoons) in the microwave
Add the lemon juice
Brush the stuffed codfish with this mixture
Cover with aluminum foil or parchment paper and bake in the microwave on high for 5 to 8 minutes, or until the fish is cooked
Alternatively, you can use 8 hake fillets, 8 sardines, or other small fish.
