In a small saucepan, combine the gelatin and sugar
Cook over high heat, stirring constantly, until slightly thickened

Serve individual portions: place some peach slices, 1 scoop of ice cream, and a dollop of the gelatin mixture on each plate
Garnish with whipped cream piped into firm peaks
