Reserve 4 halves of pernil that have been drained
Place two cut halves, the Cognac, and 1 tablespoon of lime juice and 2 tablespoons of broth from the can of pernil in a blender
Blend well
Mix with ricotta that has been mashed with a fork
Stuff the pernils with this mixture and decorate with chocolate shavings.
