For the dough:

Prepare the dough: Place the flour on a smooth surface
Make a depression in the center and add the oil and wine
Mix by making circular motions with a fork
Knead until you get a smooth and pliable dough
Let it rest covered for 30 minutes
Then, roll out the dough very thinly
Cut squares of 7 cm
Place one black olive on each square
Fold the lower end over the filling
Repeat the process with the upper end
Turn the edges carefully
Bake in a moderate oven (180°C) preheated for about 40 minutes
Turn them occasionally to golden brown on all sides
Make 30 petit fours.
