Beat the ricotta with the butter until smooth
Drain the sardines and add them to the ricotta
Mix well
Chop the onion finely and add it to the ricotta, along with the lemon juice and mustard
Season with salt and black pepper to taste
Refrigerate until serving time
Serve with French bread and stuffed green olives.
