Pulse the mangoes with confectioner's sugar in a processor or blend them gradually in a blender. Reserve
Place in a bowl, add the slightly beaten egg whites, orange blossom water, mango essence, and confectioner's sugar
Mix well and knead
Pour the mixture into a piping bag fitted with a large star tip and pipe onto an ungreased and floured baking sheet
Shape into a flower or cone shape
Decorate with a cherry or crystallized fruit piece
Bake in a medium oven (350°F), preheated, for 10 to 15 minutes, or until the bottom is lightly golden brown
