In a blender, puree the watermelon to extract the juice
In a small saucepan, dissolve the sugar in water over medium heat until it forms a thick syrup
Remove from heat and stir in the lime juice
Beat the egg whites lightly and combine with the syrup and watermelon juice
Pour into an ice cream maker and churn according to manufacturer's instructions
When the sorbet is almost set, remove from the freezer and blend in a food processor until smooth
Return to the freezer for 20 minutes before serving
Serve chilled.
