Butter and flour a medium-sized baking dish
Blend the almonds with confectioner's sugar in a processor or blender
In a bowl, whip egg whites lightly
Add the almonds, orange blossom water, extract, and confectioner's sugar; mix well
Place the dough in the piping bag and make various biscuits
on the baking dish
Decorate with a piece of candied fruit or cherry
Bake in a preheated oven at medium temperature for 10 to 15 minutes or until the bottom is lightly golden.
