Cream the butter with the sugar and vanilla extract until light and fluffy
Beat in the eggs, mixing well
Add the flour mixture and mix until just combined
Roll out the dough on a lightly floured surface to about 1/8 inch thickness
Cut into desired shapes
For this recipe, cut one half of the dough into rounds and the other half into rounds with a hole in the center (can be done with a round cookie cutter)
Place the dough pieces onto a baking sheet lined with parchment paper
Bake until golden brown
Let cool completely
Spoon some Strawberry Gelée over the whole rounds and cover with the cut-out rounds.
