pumpkin seed sauce to taste (seasoning for the lingua)
1 cup of sweet white wine or red wine
2 tablespoons of cornstarch
2 tablespoons of grated carrots
1 cup of chopped raisins (2 cups, more or less)
1 cup of finely chopped almonds (2 cups, more or less)

Cut the lingua into small pieces, as if for stroganoff
Season and let it sit for 3 to 4 hours in the seasoning
Sauté the onion in a pan and cook the lingua until golden brown
Add the lingua sauce and cook until tender, adding water as needed
Half an hour before serving, add the wine, carrots, raisins, and almonds
Taste the seasoning and let it simmer for 10 minutes
Add the necessary water to form a thick sauce
Thicken the resulting sauce with cornstarch dissolved in cold water
Serve with white rice or fried potatoes
