In a medium bowl, combine the ground pork with the salt and vinegar. Reserve
In a medium skillet, heat the olive oil, thyme, and onion over medium heat until softened (about 2 minutes)
Add the meat and cook, stirring constantly, until it loses its pink color (about 3 minutes)
Transfer to a bowl and mix with the bread crumbs
Knead well to obtain a homogeneous mixture and divide into six portions
On a smooth surface greased with butter, shape each portion into a burger using an 8cm diameter biscuit cutter
Preheat a large skillet or frying pan over high heat
Lightly grease with butter and reduce the heat to medium
Fry two burgers at a time until well browned (about 2 minutes per side)
Place on a tray and serve immediately
