1/2 pound of fish fillets (can be sweetwater fish)
1 tomato, diced
1 medium onion, chopped
1 green bell pepper, chopped
Fresh herbs chopped to taste (parsley, cilantro, dill and chives)
1 clove of garlic, minced
Juice from 1 lime
2 tablespoons of olive oil
Salt to taste

2 tablespoons of olive oil
Salt to taste
Cut the fish into bite-sized pieces and wash them in running water with lime
Process the fish together with 1/2 onion, 1/2 tomato, 1/2 bell pepper, garlic, and half of the green herbs
Season with lime juice and salt
In a skillet, heat the olive oil, sauté the garlic and half onion, bell pepper, tomato, and remaining green herbs
Add the fish, adjust the salt, and cook for 10 minutes
Serve hot.
