Mix all ingredients together, excluding the zucchinis and onions, and bring to a simmer
In a bowl, mix the zucchinis with the onions and drizzle the vinegar mixture on top
Let it rest for 1 hour, then place in a pot and let it simmer for 3 minutes
Transfer to sterilized glass jars while still warm and seal tightly
Make 5 jars of 1 liter each
