3 tablespoons of unsalted butter or margarine
1 medium-sized onion finely chopped
4 cloves of garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1/3 cup of almonds, sliced
1/3 cup of raisins
1 cup of uncooked white rice
2 1/4 cups of chicken broth
Black pepper and salt to taste
1 teaspoon grated orange zest
2 tablespoons chopped fresh parsley

In a heatproof glass or ceramic baking dish, melt the butter in high-temperature microwave for 1 minute, without covering
Add the onion, garlic, curry powder, cumin, almonds, raisins, and rice
Mix well
Place it in the microwave again without covering, in high temperature for 4 minutes
Add the chicken broth
Cover with plastic wrap and microwave at high temperature for 20 minutes
Remove from the oven, poke a few holes in the plastic wrap to allow steam to escape
Carefully remove the plastic wrap
Season with salt and black pepper
Just before serving, mix in the grated orange zest and chopped parsley.
