6 to 8 green peppers
2 cups of cooked and mashed soybeans
1/4 cup of finely chopped onion
1/2 cup of well-chopped fresh cilantro (or parsley)
1/4 cup of puree or tomato sauce
1/2 cup of grated carrot
1 1/2 cups of breadcrumbs or crushed crackers
6 to 8 green peppers
2 cups of cooked and mashed soybeans
1/4 cup of finely chopped onion
1/2 cup of well-chopped fresh cilantro (or parsley)
1/4 cup of puree or tomato sauce
1/2 cup of grated carrot
1 1/2 cups of breadcrumbs or crushed crackers
Remove seeds and white parts from green peppers
Boil for 3 minutes, drain, and sprinkle with salt
Fill with mashed soybeans, onion, cilantro, and carrot, all moistened with tomato sauce
Cover with breadcrumbs
Bake in a moderate oven for about 30 minutes or until the pepper is soft
Serve 6 to 8 peppers.
