2 kg of pintado in posts
1 kg of cassava diced into cubes
2 soup spoons of lime juice
1/4 cup of olive oil
3 cloves of garlic minced
3 tomato halves without seeds
2 onions minced
1 bell pepper minced
1/2 cup of chopped coriander
6 cups of water
1/2 cup of tomato sauce
Salt to taste

Season the fish with salt and lime, then let it rest for 30 minutes
Heat the olive oil in a pan and sauté the garlic
Add the onion, bell pepper, tomatoes, and half of the coriander, cooking for 5 minutes
Add the water and tomato sauce, then simmer
Add the cassava, season with salt, and cook until it becomes soft
Join the fish, cover the pan, and cook for another 10 minutes
Garnish with the remaining chopped coriander and serve.
