1 1/2 tablespoons of butter
3 medium-sized potatoes, peeled and cut into thin slices
Salt and pepper to taste
1/2 cup of chopped onion
1/2 cup of chopped green bell pepper
1 can of pork or beef, cut into strips
3 eggs
1/2 cup of shredded cheddar cheese
1 1/2 tablespoons of butter
3 medium-sized potatoes, peeled and cut into thin slices

Melt the butter in a 25cm diameter frying pan
Spread half of the potatoes over the bottom of the pan; season with salt and pepper
Top with a layer of half the onion, followed by half the green bell pepper, seasoning again with salt and pepper
Now add half of the meat
Repeat the layers of vegetables and finish with the remaining meat
Cover and cook over low heat for 20 minutes
Beat the eggs lightly and pour them over the potatoes, spreading evenly
Cover and cook for another 10 minutes, until the eggs are set
Sprinkle shredded cheddar cheese on top; cover and cook slowly for 2 minutes, until the cheese starts to melt
Cut into slices to serve; serves 5-6 portions.
