1/2 cup unsalted butter or margarine
1/4 cup confectioners' sugar, sifted
1 cup all-purpose flour, sifted
For the filling:
2 tablespoons cornstarch
2 tablespoons sugar
2/3 cup orange juice
1/2 cup passionfruit gelato
1 can pigeon jam drained
For garnish:
whipped cream (optional)

Make the dough: In a bowl, beat the butter or margarine with confectioners' sugar until creamy
Add the flour and mix until smooth
Shape into a pizza crust and perforate with a fork
Bake in a moderate oven (170°C) for 15-20 minutes
While that's baking, prepare the filling: Mix cornstarch and sugar in a small saucepan
Add orange juice and passionfruit gelato, stirring well
Heat over medium heat, stirring constantly, until it thickens and cooks for 2 minutes
Let cool slightly
Arrange pigeon jam on the dough in concentric circles, one inside the other
Pour the cooled filling mixture over the pigeon jam and refrigerate
Serve with whipped cream (optional)
