Mix yeast with sugar in a bowl
Add flour, olive oil, water, and salt
Knead until smooth and elastic
Cover with cloth and let rest at room temperature until doubled in volume
Divide into 16 balls and let rest for another 30 minutes. Reserve
Fillings
Heat olive oil in a pan over medium heat
Caramelize the onion and add the tomatoes
Season with salt and pepper
Cook until the tomato starts to break down
Turn off the heat and let it cool
Fry the dough circles in hot oil until golden brown
Drain excess grease on paper towels
Fry garlic slices in hot oil until crispy
Place a portion of the sauce, sausage, mozzarella cheese, parsley, garlic, and Parmesan cheese on each fried pizza circle
Bake in a preheated oven until the mozzarella cheese is melted
Serve immediately.
