500g of cod loin, drained (see page 58)
1 tablespoon of lemon juice
5 sprigs of rosemary
6 cloves of garlic with skin
1/2 cup of olive oil
Scallions
6 scallions
1/3 cup of butter
1/2 teaspoon of salt
1/4 cup of white wine
1 tablespoon of vinegar

Cooking Preparation
Cod
Preheat the oven to medium temperature
Cut the loin into four portions
Season with lemon juice and place in a baking dish
Add rosemary and garlic on top
Drizzle with olive oil, cover with aluminum foil for 30 minutes or until the cod is golden and cooked through
Check the salt
Scallions
Remove the seeds from the scallions and cut them into 0.5 cm thick slices
In a frying pan, heat the butter, salt, white wine, and vinegar until dissolved
Add the scallions and cook for five minutes or until slightly tender
Assembling
Serve the scallions alongside the cod and garlic
