1 kg of badejo steaks
Salt and black pepper to taste
2 medium tomatoes, cut into slices
1/2 small cucumber, cut into slices
2 tablespoons of butter or margarine - 30g
4 tablespoons of chopped onion - 60g
4 tablespoons of finely chopped bell pepper - 48g
1 clove of garlic, minced - 4g
2 tablespoons of chopped fresh parsley - 10g
2 tablespoons of lemon juice - 30ml

Place the badejo steaks in a greased baking dish
Season with salt and black pepper
Arrange tomato and cucumber slices on top
In a skillet, sauté the onion, bell pepper, and garlic in butter until the onion is softened but not browned
Remove from heat
Add chopped parsley and lemon juice to taste
Season to taste and serve over the fish
Bake in a moderate oven (180°C) for about 40 minutes or until the fish is cooked
Dish out into 6 portions.
