Sauté the onion in olive oil in a pan and add the cod fillets, parsley, and salt
Cook for 5 minutes and then add the tomato puree, stirring constantly until the fish starts to flake
Transfer the mixture to a greased baking dish and reserve
Mix the yogurt and fresh cheese in a blender and reserve
Beat the egg whites until fluffy and fold them gently into the yogurt mixture
Pour over the fish
Dust with grated Parmesan cheese and bake until golden.
