Wash and clean the soybeans, place them in a bowl and cover with cold water
If cooking the soybeans in a pressure cooker, add 1/4 cup of oil
The soybeans will increase threefold in volume when soaked, so ensure the bowl is large enough and contains plenty of water
To cook the soybeans, place them in a large pot with the soaking liquid and add more water if necessary
Add salt, bring to a simmer and cook for 3-4 hours or until tender
When cooking soybeans in a pressure cooker, combine soybeans, oil, soaking liquid, and salt in the pot, adding enough water to cover them
Don't exceed half the capacity of the pot
Close the lid, set the valve, and cook according to the manufacturer's instructions for 30 minutes
After cooking, let it cool naturally, removing the valve once all pressure has escaped
6-7 cups of cooked soybeans
Note: If desired, blend or puree the soybeans using a blender or food processor, adding a little at a time
