1 tender ham, 4 to 5 kg
1 jar of golden syrup (Karo)
1 cup of sugar
3 tablespoons of mustard

fruits in syrup (peaches, figs, etc.)

Let the ham soak in water overnight
Remove the dark skin from the ham, but leave all the fat
Cut the ham into diamond shapes over the fat, being careful not to cut the meat
Cover the ham with a mixture of golden syrup, sugar, and mustard
Place the ham in the oven at medium heat
Dust with the remaining topping while it's baking and baste with fruit juice (orange, pineapple, etc.) every 10 minutes or so
Bake for approximately 2 1/2 hours
The ham is ready when the topping is well caramelized
Serve surrounded by fruits in syrup.
