1/2 pound of tender ham cut into small cubes (use leftovers)
1 tablespoon of olive oil
1 chopped onion
1 green bell pepper chopped
1 tablespoon of chopped fresh parsley
1 large can of peeled tomatoes with juice
4 cups of okra cut
1 bay leaf
salt and pepper to taste
3 cups of cooked rice, hot

Sear the ham in olive oil
Add the onion, bell pepper, and parsley
Cook for 5 minutes
Add the tomatoes with juice and cook slowly for 40 minutes
Add the okra and bay leaf and cook for another 20 minutes until the sauce thickens
If it becomes too dry during cooking, add a little water
Season to taste
Shape cooked rice into a ring mold
Remove from mold and place the ham mixture in the center and around the rice
Serve in 6 portions.
