Pastry dough for cream puffs, chocolate icing, and caramel: see below for Saint-Honor's cake recipe.
Chocolate sauce:
125g of semisweet chocolate
1/2 cup of water
30g of unsalted butter or margarine
Prepare the pastry dough for cream puffs and chocolate icing
Bake the cream puffs in the oven for about 20 minutes
When they're well risen and lightly browned, remove them and let them cool
Make a small hole in each puff and fill it with chocolate icing using a piping bag
Prepare the caramel and quickly dip each puff into it
Assemble a tower by stacking the puffs that will stick together due to the caramel
Prepare a chocolate cream by melting the chocolate in a bowl with water, then whisking in the butter or margarine
Present the cream puff tower at the table and pour the warm chocolate over it, as your guests watch
You can garnish with edible flowers or candied cherries
