Combine the milk and water in a medium saucepan and bring to a boil over high heat
Add the butter, then stir until it is fully incorporated
Remove from heat and sprinkle with salt
Let cool slightly
Gradually add the flour while stirring vigorously to form a smooth batter
Transfer the batter to a pastry bag fitted with a 1/2-inch tip
Pipe small balls of dough, about 5 cm in diameter
Place them on a baking sheet lined with parchment paper, leaving space between each puff
Bake at 180°C for 15 minutes or until golden brown
To serve, open the puffs and fill with a scoop of ice cream and warm chocolate sauce [recipe below]
