1 1/4 cup hot milk

3 egg whites, lightly beaten

1/8 teaspoon almond extract

Mix the confectioner's sugar with the hot milk and heat over low heat until warm, without boiling
Stir in the vanilla and almond extracts well
Pour this mixture into a buttered 9x13-inch baking dish or individual ramekins
Pour the hot milk over the lightly beaten egg whites and beat very well
Transfer this mixture to a shallow baking dish or individual ramekins and smooth the top
Bake in a moderate oven (325°F) for 30 minutes, or until a knife inserted into the center comes out clean
Let cool and serve sprinkled with confectioner's sugar, if desired
Serve 6 portions.
