1/2 cup of tapioca (available at nordestino stores)

1 liter of water
1/2 kilogram of sugar
200 ml of coconut milk

Baba-De-Moça
1 liter of water
1/2 kilogram of sugar
200 ml of coconut milk
4 egg yolks
Make the pudding: in a medium saucepan, scald the milk
Remove from heat and add tapioca
Stir vigorously to prevent lumps
Transfer to a blender and add egg yolks, condensed milk, coconut milk, butter, and grated coconut
Blend well and reserve
Beat the egg whites until fluffy and fold them delicately into the tapioca cream
Pour into a caramelized mold and bake in a water bath at medium heat for 1 hour or until firm
Make the Baba-De-Moça: mix cold water and sugar, then boil to obtain a thick syrup
Remove from heat and let cool
Mix coconut milk and bring to a simmer in a water bath
Sieve the egg yolks and add them to the syrup
Stir constantly until it comes to a boil
Pour the chilled pudding into individual servings and serve with Baba-De-Moça.
