'4 tablespoons of dark rum'
1/2 cup crystallized fruits, chopped
'4 spoons of unsweetened gelatin'

1 tablespoon of cold milk
6 egg yolks, separated
2/3 cup granulated sugar
2 cups heavy cream whipped in a meringue
crystallized fruits (optional)

'Soak the dark rum over 1/2 cup of crystallized fruits and reserve'
Mix the gelatin with 1/2 cup of granulated sugar and salt
Gradually add the cold milk, whisking well, and cook in a water bath until the gelatin has dissolved
Gradually add the whipped egg yolks to the gelatin mixture and heat again over low heat, whisking constantly, until the mixture thickens slightly
Let it cool
Add crystallized fruits
Beat the egg whites until stiff and gradually add 2/3 cup of granulated sugar, beating continuously
Carefully fold the gelatin mixture into the whipped egg whites
Add the heavy cream chantilly
Pour the mixture into a decorative mold and refrigerate until firm
If desired, garnish with crystallized fruits
Dessert for about 10 people.
