2 cups of fresh breadcrumbs
1/3 cup of melted butter or margarine
1/3 cup of sugar
1 tablespoon of grated lime zest
1 teaspoon of ground cinnamon
4 bananas sliced into thin rounds
2 tablespoons of freshly squeezed lime juice
1/4 cup of water
1/2 cup of shredded coconut
2 cups of fresh breadcrumbs
1/3 cup of melted butter or margarine
1/3 cup of sugar

Preheat the oven
Grease a 1.5 liter form
In a small bowl, mix together the breadcrumbs and melted butter
In another bowl, combine the sugar, lime zest, and cinnamon
Place one-third of the breadcrumb mixture in the prepared form
Cover with half of the sugar mixture
Repeat the layers
Mix together the water and lime juice and pour over the top
Mix the remaining breadcrumbs with the shredded coconut and sprinkle on top
Cover and bake in a moderate oven for 3 minutes
Then, remove the lid or paper and broil until the coconut is golden brown
Serve warm, yields 6 servings
