Preheat the oven to 350°F
Prepare a pudding mold with 20 cm diameter
Blend in a blender the bananas, eggs, milk, sugar, cornstarch, cinnamon powder, and salt
Add the lemon zest and pour the mixture into the mold
Bake in a water bath for 40 minutes
Let it cool down and then unmold

In a saucepan, combine sugar and bring to a boil over low heat, stirring constantly until caramelized
Add water, let it simmer, add banana slices, and mix until they're covered with the caramel sauce
Remove from heat, let it cool down, and serve with chilled pudding.
